Tuna Challenge Week 2

This week we have been messing around with a few Tuna substitute recipes. So whos up for trying our

***** Tuna wraps / Tuna Enchiladas *****

Ingredients:
• 1 Jar of - Shines Irish Albacore or Shines Yellow Fin Tuna
• 1 TBSP. Olive oil from the Tuna JAr
• ½ red onion, diced
• 2 cloves garlic, minced
• 1 can of Sweet Corn or Kidney beans or diced peppers ( or something of your choice)
• 1 can diced tomatoes ( with or without chilies )
• 8 corn tortillas ( or wraps )
• 1 Old El Paso Enchilada Sauce (
• 1 cup grated cheese (of your choice)

Directions:
• Preheat oven to 180c.
• Heat oil in skillet over medium heat. Add onion and garlic and sauté until softened.
• Add corn, tomatoes and tuna and continue cooking for 5 minutes.
• Meanwhile, microwave tortillas on high for 30 seconds to soften.
• Place 1 scoop of enchilada sauce in bottom of a casserole dish.
• Place ~ scoop of the tuna mixture in the middle of each tortilla. Fold tortilla over filling and roll. Place all 8 in casserole dish, seam side down. Top with remaining enchilada sauce and cheese.
• Bake in preheated oven for 15 minutes. Cheese should be melted.

***** TUNA STIR-FRY *****

So after an hour or more of trying to do this we realised that our cooking skills are better than our camera skills.

This Jamie Oliver video can be adapted to any Fish. We have just used his method and flaked a jar of out Wild Irish Tuna onto the dish after cooking. ( As it is already cooked)

We used

- 1 Jar of Shines Wild Irish Tuna
- SuperValu Ireland mixed stirfry pack,
- Donegal Rapeseed Oil Chilli flavour ,
- Supervalu light soya sauce &
- Noodles or Rice of your choice.

This can be used with Salmon, Prawns, Cod, Crab Meat and much more.
